A few points:
P1: I employ Guitar Rig 5 [GR5] in my current set-up.
* Though GR5 is considered by many to be somewhat archaic, I personally find GR5 more-than-adequate for my particular needs [...and GR5 does not employ JUCE!]
P2: Guitar Rig 5 can be employed as either a "stereo" or a "mono" plug-in.
P3: I employ a steel-strung acoustic that employs two "pickups", a) a soundhole magnetic pickup [DiMarzio Black Angel], and b) a 3-element transducer system [JourneyTek EPK001].
P4: I employ a balanced socket, with a cable that employs a balanced Male jack...terminating in two Male, XLR plugs.
P5: Input 5 is assigned to the DiMarzio Black Angel, and input 6 is assigned to the JourneyTek EPK001.
My question is, "Can a single instance of GR5 be employed in the above scenario, with [L] being assigned to Input 5, and with [R] being assigned to Input 6?
Any assistance in this matter would be greatly appreciated!

Del, I don't use Guitar Rig, so it's possible that there is something about it that would preclude its use in this situation. But it sounds as if what you really want to accomplish is to have the output of both pickups combined and run through Guitar Rig. I think that you would find that running one pickup to L and one to R would sound funny, but that you're thinking this might be a way that both could be amplified and you are willing to compromise this far to get that. If I'm wrong, I think you can still do that just by panning 5 and 6 hard to their respective side.
This is actually very simple. Describing it makes it sound more complicated than it is. Anyway, what you could at least try is running inputs 5 and 6 to their own output channel, and point that output channel to a second output channel - where you would also point the output of your microphone and anything else you're amplifying. And then point that second output channel to the real world amp and speakers. That way you use the first output channel to combine the pickup inputs and send them to Guitar Rig, and the second output channel to actually route out of the system. So, where 'I' is In, and 'O' is Out, and '->' is a signal route, basically:
I5 -> O1 -> O2
I6 -> O1 -> O2
Mic (and anything else...) -> O2
O2 -> real world
Then, instantiate Guitar Rig on O1 instead of either I5 or I6. You can adjust the gain of I5 and I6 relative to each other to get the ideal pickup sound balance, as well as using the equalizer on each, etc. to optimize each pickup if you choose. Then, adjust the gain of Guitar Rig, relative to anything else you're amplifying, using the O1 slider which, again, is the sum of I5 and I6 - from O1. And control the overall gain into the room from O2. Make sure the combined guitar channel gain isn't too hot for Guitar Rig. The I5 and I6 sliders only represent the relative gain of the two pickups, after all - not how loud you want it in the room.
There's no reason that the two pickups have to have the same amount of gain relative to each other. You can use I5 and I6 to arrive at an ideal combined sound for input into Guitar Rig on O1. You can even experiment with frequency filtering I5 and I6 differently for the portions of the frequency spectrum you like about each of them. Adjust I5 and I6 to arrive at the ideal input signal. Then, in performance, use O1 for the the guitar as whole with the combined pickups and volume relative to mic and etc. I guess what I'm saying is get the input signal to Guitar Rig right ahead of time from I5 and I6 - and then don't touch those input channels again. Instead, use O1 to make your combined guitar output louder or softer in the mix with your mic, et. al, and O2 to control how loud your total sound is in the room.
And, again, if you really want to, you can pan I5 and I6 hard left and right respectively. But I wouldn't...
I did something like this once, years ago, to mix a guitar mic and a guitar pickup and then run the combo through the same effects simultaneously. In this case, Guitar Rig is the effect. It seems like there was a surprise gotcha in here somewhere having to do with the order of the output channels. But I can't look at the moment. You might have to reverse the purpose of O1 and O2. But... maybe not.
